Sabai is more than a restaurant — it’s an invitation to experience Thailand in its most honest, expressive form. Created by the team behind Uma Nota Manila and led by a Thai kitchen team, Sabai celebrates tradition without compromise. We explore the full landscape of Thai cuisine — from regional favorites to lesser-known dishes rarely seen outside Thailand. Our herbs and spices are grown locally from imported Thai seeds, ensuring authenticity from the ground up. Sabai means comfort, expressed here through soulful food, warm service, and shared connection.


Meet Our Chef
Chef Puwadol “Tob” Assavadathkamijon was raised in Hat Yai, Southern Thailand, where his family ran a humble som tam shop. From a young age, he was immersed in the kitchen — learning that food could be both comforting and powerful.
After earning a degree in Kitchen and Restaurant Management from Dusit Thani College, he helped expand the family business before pursuing greater culinary horizons. He went on to train in several Michelin-starred kitchens, including Sühring, Pru, and Le Normandie — sharpening his craft while staying true to his roots.
With a background in painting, Chef Tob brings an artist’s touch to every plate — balancing regional Thai flavors with refined composition. At Sabai, his food tells a story: honest, expressive, and proudly Thai.
